Chewy Carob Bars

Sharing these bars with friends brings joy to all. It doesn't take long for someone to ask, "Is there chocolate in here?" These bars are an instant hit every time, with every crowd! They are both gluten-free and soy-free in addition to being plant based, so they are an excellent option for those who are unable to eat many typical holiday treats. They are one of several favorite recipes to add to holiday treat baskets!

Sometimes I like to make these bars as almond bars instead of cashew bars. To do this, I will use almond butter in place of cashew butter, and then top with chopped roasted and salted almonds.

You can easily prepare these bars in advance. Cut and gently wrap

each piece in clear wrap, then freeze in an airtight container for up

to a month. Remove from the freezer a few hours to a day

before serving, and enjoy!

Chewy Carob Bars Recipe

BARS

¾ c. (192 g) cashew butter

½ c. (170 g) honey

⅓ c. (37 g) almond flour

⅓ c. (47 g) sorghum flour

⅓ c. (43 g) cornstarch

½ tsp. (1.3 g) xanthan gum

1 c. (81 g) quick oats

½ tsp. (2.5 mL) vanilla

¼ tsp. (1.5 g) salt

1½ c. (180 g) carob chips

TOPPING

½ c. (128 g) cashew butter

2 tbsp. (20 g) plant-based milk powder or tapioca starch

2 tbsp. (16 g) cornstarch

¼ c. (84 g) honey

½ tsp. (2.5 mL) vanilla

1 tbsp. (15 mL) water or more to thin icing to a spreadable consistency

1½ c. (192 g) roasted and salted cashews, finely chopped

INSTRUCTIONS

1. Mix all of the bar ingredients except for the chips. Press into a lightly greased 9 x 13 in. (23 x 33 cm) pan.

2. Bake at 350°F (177°C) for about 12 minutes, just until the edges begin to turn golden.

3. Remove from the oven and immediately sprinkle with the carob chips.

4. Allow the bars to sit for a few minutes, then carefully smooth the chips evenly over the crust using a butter knife or small metal spatula. Allow the bars to cool completely.

5. Blend the topping ingredients, except for cashews, until smooth. Spread over the cooled bars and sprinkle with the chopped cashews.
